Grilled Halibut with Lemon Crust

Ingredients

3/4 cup bread crumbs 100 g
2 tbsp Parmesan cheese 6 g
2 tbsp lemon, for juice and zest 3/4 lemon
1 tbsp margarine non-hydrogenated , melted 14 g
2 tbsp mayonnaise 28 g
1 tbsp fresh tarragon, chopped 2 g
4 halibut steaks, 1/2" thick 700 g

Method

  1. Combine bread crumbs, parmesan cheese, lemon zest and melted margarine to make crumb mixture.
  2. In a separate bowl combine the mayonnaise and tarragon.
  3. Arrange halibut fillets skin side down on a platter. Spread each piece with mayonnaise mixture and press on crumb mixture. Preheat barbeque on high for 10 minutes.
  4. Reduce heat to medium-high. Place fillets on barbeque skin side down. Close lid and cook for 10 to 12 minutes or until fish flakes easily and topping is browned. Drizzle lemon juice over the fillets and serve.
